“We would aim for your mother, but we figure she’s far too easy a target.”
So, I suppose the big question is “Why isn’t the trebuchet crew armed?” Well the simple answer there is in their title: they’re trebuchet crew, operators of machinery intended to aim for targets at very very long distance. The idea that they’d get into actual combat themselves is one that doesn’t occur very often outside of the open battlefield (where even then they’re more usually being attacked by other trebuchet crews), and carrying a sword or wad of crossbow bolts would impede the speed at which they could aim, load, and fire their weapon. Their armour is partially uniform and partially anti-ranged fire.
I imagine this group of resistance soldiers would probably have made it through the tower much more slowly (and with more alert up top) had the guard recovered from the surprise assault just yet. As it stands though, they’ve reasonable reason to be cocky, for the moment at least.
